1 tsp olive oil
Juice 1/2 lemon
2 tsp lemon zest, grated
1/2 cup grated cucumber, peeled and seeded
1-2 garlic gloves, grated or minced
1 tbsp fresh dill, finely chopped

Directions
- Begin by grating the cucumber after it has been peeled and seeded. Place the cucumber shreds in a strainer and sprinkle with a little salt. Allow the cucumber to drain for at least 10-15 minutes to remove excess water. You can also use the back of a spoon to press the shreds to remove additional water.
- Add all of the ingredients together and mix well. Adjust salt and pepper.
- Allow tzatziki to sit for at least 20 minutes to develop flavor.
