Hi, I’m Jasmine. I’m a Family Nurse Practitioner in Austin, TX and I’ve been teaching folks about healthy eating and nutrition for over a decade.
Eating healthy is not as hard as you think but a lot of people don’t know where to start. Learning a few simple recipes that can become weekly staples is a good way to get the ball rolling. All of the recipes here represent food that I feed my family. They’ve all been vetted, tested, and tasted. So if you’re new to vegan and vegetarian cooking, or if you’re just looking for some new ideas, I hope you can find some inspiration within these pages.
When I was growing up, there was a popular TV series called Alice. One of the main characters was Flo, a sassy waitress, whose catchphrase was “Kiss My Grits!” This was her semi-polite way of telling people off and the phrase itself became an iconic Southern expression. Most episodes were set in Mel’s Diner, where they served classic, not-so-healthy, American fare.
Well, I’m not here to tell anyone off, but I am offering up modern, plant-based twists on all kinds of cuisines, including Tex-Mex, Southern, Asian and Mediterranean food. I would invite you to invest in yourself and your family with these healthy, veggie-forward meals.
